This is mine:
We ate it with barbecued chicken.
Verdict: I wasn't a huge fan. It was okay, but I won't be making it again. The fresh parsley was too strong for me. If you make it, make sure there are no leftovers or throw them away. I had it the next day and it just didn't taste good. This was the first time I had eggplant and it's not bad, but I wish I had it in a different more tastier way for the first time. Lots of cheese makes it better though.
